This is a Spanish mushroom recipe that will satisfy any mushroom lovers in your household.
It serves about 6 people, and works well as a side dish or a main meal as long as you adjust the size of the servings. Mushrooms With Walnuts and Sherry Recipe You Will Need: 2 tbsp margarine 2 tbsp healthy oil Half a pound (3 cup) organic mushrooms half a cup walnuts - finely chopped then toasted lightly 2 tbsp dry sherry One Tablespoon fresh lemon juice 1 tsp orange peel or lemon peel - grated 2 tbsp fresh parsley (finely chopped) Salt (as required) Directions: In a skillet or frying pan heat gently and melt the butter and oil together. Turn the flame up to medium/hot and transfer the mushrooms to the pan, saute them gently until they are tender. Now add the sherry, lemon juice, walnuts and citrus peel. Saute the mix for 60 seconds or so, mixing well to guarantee the mushrooms are covered with the lovely juices. Add salt to taste, and sprinkle with chopped parsley just before serving.
