Recipe for Organic Chicken Cooked in Traditional Cyder

Chicken is quite rightly one of the best loved meats in the world.
It is virtually fat free, is protein rich, exceedingly versatile and is the key ingredient in a lot of diet recipes. If you are able to get hold of an organic chicken, that will be better still, as it will be a purer meat, with less chance of it containing added hormones. It Is also a great policy from the animal welfare point of view, as some of the supermarket chickens are housed in conditions that are pretty immoral.
If you are not trying to lose weight, ther is no need for concern, there is more to chicken than low fat recipes. Even so, almost all chicken recipes will be, more often than not, healthier than the same recipes prepared using other meat, such as pork or lamb.

Here's a basic recipe that will definitely delight your family and friends.

It requires:

One organic chicken (approximately 3.5 lb)
Two C. of cider
6 apples (pared and cut into quarters)
salt (as required)
pepper (as required)
1 teaspoonful cornstarch
1/2 C. of whipping cream
1 tablespoon of fresh lemon juice
1/3 C. of butter
Two T. of olive oil
1/4 teaspoonful ground cinnamon (if you like - its optional)
Four green onions, (finely chopped)
Two cloves
1/4 teaspoonful ginger
1 sprig of parsley, (finely chopped, for use as a garnish)
1/2 teaspoonful dried thyme
Two teaspoons of sugar


Preparation:

Clean the Organic Chicken and dry it well.
Mix the pepper and salt amd smooth it into the chicken (exterior and interior)
Pour the lemon juice over the apple pieces.

Take a large frying pan or skillet and heat half the butter until melted then add the olive oil.
Add half of the apples to the pan and fry gently for 5 mins. until browned slightly
Add the ginger and give it a few stirs, frying a little longer to allow the ginger to develop it's flavours.
Stuff the chicken with mixture from the frying pan and close the cavity by string or by use of a skewer.

Melt the remaining butter into the pan and then add the chicken to the skillet and fry until the skin is browned a little, making sure it browns equally all over.
Transfer the chicken to a large casserole pot with lid.
Take the apple that is left, the green onions, ground cinnamon, dried thyme, sugar and cloves and add them all to the frying pan.

Fry gently for two to three mins and pour in the cyder and bring to the boil.

When the cider is at boiling point, pour it over the chicken in the casserole dish and replace the lid, using foil or wax paper to ensuer a good tight seal.

Transfer to the oven and cook for about three quarters of an hour at Gas Mark 6

When the chicken is ready, remove the chicken from the pot and put onto a warm plate to keep warm whilst the gracy/sauce is prepared.

Skim and remove any fat from the pot and then boil off the juices until there is approx one cupful remaining.

Pour in the whipping cream and cornstarch, mixing well until it is nice and thick.
Season to taste, and pour the sauce over the organic chicken

Toss some of the parsley over the top, and serve.

To make the meal into a healthy and well balanced meal, you could add side servings of asparagus or butter beans and new potatoes.
