Salt And Pepper Soup

Submitted by mbjohn

The fillets are small pieces of some kind of white fish dipped in batter and deep fried. The pepper refers to actual peppers and not the spice. Though they are deep fried they texture is not crispy. They are so good. I hope someone has a recipe for it.

This is one of my favorite lemon pepper fish recipes. Cod fillets marinaded for 30 minutes in lemon and chopped pepper and then baked in the oven - simplicity itself.

Lemon Pepper Fish Recipe
4 fillets of cod, skinned and boned
Pinch of salt and fresh black peppercorns
1 lemon - juiced
1 chilli pepper - deseeded and finely chopped
1 tbspn olive oil

Place the cod fillets in an oiled ovenproof dish - season with salt and pepper and the lemon juice. Sprinkle the chopped pepper and oil over and then rub into the fillets - both sides. You could microwave this dish for 10 to 12 minutes - turn the fish halfway through. A simple, straightforward way of cooking cod. You could serve this with some new boiled potatoes, fresh broccoli and cauliflower dotted with butter - it's absolutely delicious - the pepper adds a lovely 'bite' to the flavor of cod. We recommend salmon because it's widely available now. But any firm-textured fresh fish, such as snapper or tilapia, will work just as well. The recipe for Red-Hot Tartar Sauce also is really good on fish tacos. We tried it recently with tilapia fillets that had been salted and peppered, then dredged through corn flour (such as Zatarains). The combination of crisply fried fish wrapped in steamed corn tortillas, dressed with slivered cabbage and a good spoonful of this lightly spicy tartar sauce was a taste. .
