Casein is a protein which can found in milk and its work as a binding agent and sometime listed as a calcium and milk protein as well. It also has some other form like Acid Casien, Sodium Caseinate, Black Lemon, Technical Casein which is part of group called phosphor proteins.

Casein is a protein that is found in milk and used in many foods such as a binding agent. Casein is often listed as calcium, milk protein, which has been reported for the reduction on tooth decay. Technically, it is part of a group called phosphor proteins, collections of proteins containing some phosphoric acid.
Casein consists of a fairly high number of proline peptides, which do not interact. There are also no disulfide bridges. As a result, it has relatively little tertiary structure. Because of this, it cannot denature. It is relatively hydrophobic, making it poorly soluble in water. It is found in milk as a suspension of particles called casein micelles which show some resemblance with surfactant-type micellae in a sense that the hydrophilic parts reside at the surface.
Casein is basically found in two main types: one edible casein and second technical casein. Edible casein is widely used in medicine and food, cereals, instant drinks, bread, pudding, ice cream, processed cheese, etc; for nutritional value as well as a binder. The Technical casein is used in an enormous range of products, such as cosmetics, paints, and in many types of cements or glues, textile fabrics, etc.
Casein is like a salt, means it has no net ionic charge, of the calcium element. It has a number of interesting properties that make it useful in foods and cooking. Many people believe proteins are healthier if consumed when not denatured - one of the major lines of reasoning used in supporting a raw food diet. Denaturing occurs when a protein loses its inherent structure, due to high heat or acid for example, at which point it no longer acts in the ordinary manner. Casein, because of its structure, is not susceptible to denaturing.
Acid Casein is produced by controlled acid precipitation from skim milk. All the product shipments fully comply with all USDA voluntary standards for extra edible acid casein. This is pure, low fat milk protein, free of the carbohydrate found in skim milk, which can be used in varieties of food products to provide increased nutritive value.
Casein is often listed as sodium caseinate, calcium caseinate or milk protein. These are often found in energy bars, drinks as well as packaged goods. Sodium Caseinate are suitable for products that require high emulsification, rapid dispersion as well as are soluble in food and pharmaceutical applications.
Technical Casein is normally used in the products like Safety Matches, paints, plastics, glues, leather chemicals, coated paper, plywood industries, paper chemicals, paper tubes, etc.
