Most of us love having cookouts and eating at our picnic tables. That’s no surprise. What’s interesting is that many people enjoy cooking the food more than eating it. There’s something about the ritual of the preparation, which begins even before the cooking begins, that sparks a sense of camaraderie and cooperation among those in attendance, especially when they consider themselves master grillers or barbecuers.

It’s more difficult than it looks, and even a few small missteps can devastate a perfectly good cut of meat. First, realize that it’s no sin to be a beginner, and that it takes more than a chef’s hat and an apron with a hilarious saying on it to make you an expert. Remember, just as barbecuing is a slow process, so is becoming proficient at it. One of the biggest mistakes made by beginners is being over-eager. Many times, they go out and get a smoker, then invite people over for the next weekend – or, worse, the next day. Don’t do that. Get to know your smoker, by starting small, and experimenting – this is important – on yourself! Start off with something simple, inexpensive, and hard to ruin, like a chicken or a pork picnic roast, and cook only one at a time, until you have done a few successfully.
