Picnic Tables Pose No Perils

In the summertime, we spend a lot of time outdoors, eating meals at our picnic tables, doing yard work, or just lazing around. For many people, summer is the best season of the year; but it can also be the most hazardous.
We’re always reading articles and hearing news stories telling us about summer’s perils, and advising us of the best ways to stay safe, in the sun, in the water, and while handling fireworks. There are also warnings about precautions we should take with food, especially at picnics, when things may be left outside for longer periods of time; but some unpleasant possibilities get less press.
Many of us, when grilling or barbecuing meat, smoke it, to enhance the flavor. Several kinds of woods can be used, and each has its own, distinct flavor and characteristics. While hickory, mesquite, and oak, are some of the most popular ones, there are a lot more that can add delicious tastes to meat; but, using the wrong types of woods can do a lot worse than to simply ruin good meat.
One danger is that there are many kinds of trees that contain toxins, which can survive the cooking process. Wood from a conifer, such as pine, fir, spruce, redwood, cedar, or cypress, should never be used for smoking, as it can cause people to get very sick.
Another potential problem comes from used wood that has been treated with chemicals, because whatever is on or in the wood will get onto and into the meat as you smoke it. Therefore, you should not use scrap wood, because you can never be sure what kind of wood it is, what it was used for (it could have been part of an old outhouse!), or whether or not it has been treated with chemicals. Wood that has been stained or painted may contain chemicals, or, if the paint is very old, lead. Other questionable sources include furniture manufacturers, who often treat their wood with chemicals, and wood from old pallets, which could have been treated, or exposed to heaven-knows-what (and you probably don’t want to know!). You should also avoid old wood with mold or fungus on it, as it can, at the very least, give your meat a horrible taste.
