<title>Crock pot; so easy, so tasty!</title>

<description><![CDATA[ Do you remember coming home from school and smelling a delicious dinner stewing in the crock pot?  I do.  Little did I know that delicious meal only took, at the most, 15 minutes to prepare.  My mom was busy with school and work, so she did not have a lot of time to prepare meals.  Lucky for me, we had a crock pot.  She would do all of the grocery shopping on the weekend and we would use the crock pot two or three times a week.  The main ingredients were chicken and some type of bean.  Some of my favorite meals included baby back ribs, ham hocks and beans and roast beef.  <br>Before you begin, there are a few guidelines that you should follow when using a crock pot. Whether you are cooking for a big group or a nice dinner, these tips will enhance your slow cooking experience. <br>Crock Pot Hints and Tips<br>Beans <br>Beans must be softened completely before combining with sugar and/or acid foods (NOTE: Sugar and acid have a hardening effect on beans and will prevent softening). Dried beans, especially red kidney beans, should be boiled before adding to a recipe. Cover the beans with 3 times their volume of unsalted water and bring to a boil. Boil 10 minutes, reduce heat, cover and allow to simmer 1 1/2 hours or until beans are tender. Soaking in water, if desired, should be completed before boiling. Discard water after soaking or boiling.<br><br>Meats <br>• Due to the nature of a crock pot, meat does not brown as it would if it were cooked in a skillet or oven. It is not necessary to brown meat before slow cooking, however, if you prefer the flavor and look of browned meat, brown your meat in a skillet with a little oil, then place the meat in the stoneware and follow the recipe as usual.<br><br>• Trim fats and wipe meats well to remove residue. (If meats contain fats, brown in a separate skillet or broiler and drain well before adding to cooker). Season with salt and pepper. Place meat in stoneware on top of vegetables.<br><br>• For roasts and stews, pour liquid over meat. Use no more liquid than specified in the recipe. More juices in meats and vegetables are retained in slow cooking than in conventional cooking.<br><br>Liquids <br>• A specific liquid called for in a recipe may be varied if an equal quantity is substituted (such as substituting a 10 1/2 ounce can of soup plus 4 ounces of water for a 14 1/2 ounce can of tomatoes OR 1/2 cup beef or chicken broth for 1/2 cup of wine, etc).<br><br>• Roasts can be cooked without water when set on LOW. We recommend a small amount, however, because the gravies are especially tasty. The more fat or “marbling” the meat has, the less liquid you need. The liquid is needed to properly soften and cook vegetables.<br><br>Vegetables <br>Most vegetables should be thinly sliced or placed near the sides or bottom of the stoneware. Meats generally cook faster than most vegetables in a crock pot.<br>Cooking with Frozen Foods You can cook frozen meats in your crock pot, however it is best to use the following guidelines:<br><br>• Add at least 1 cup of warm liquid to the stoneware before placing meat in the stoneware.<br><br>• Do not preheat the crock pot.<br><br>• Cook recipes containing frozen meats for an additional 4 to 6 hours on Low, or an additional 2 hours on High.<br><br /><br />--<br />Michael K. <description><![CDATA[ <br>San Francisco, California January 30, 2007: With internet traffic increasing at unprecedented rates, service providers are ramping up their networks to support the bandwidth intensive applications of the ever-growing web. According to a recent Dell’Oro report, the worldwide market for service provider routers is projected to approach $9 billion by 2011. Targeted at Internet service providers (ISPs), cable network operators, as well as triple and quadruple play operators, Foundry Networks has made a power play for the metro network space with the NetIron MLX routers. Based on the flagship XMR series router, the MLX offers the highest 10GbE and GbE density available to address current and forthcoming service provider capacity requirements. These improvements targeted the Triple and Quadruple play service providers who host bandwidth intensive applications, such as video on-demand, broadcast television, and large scale Voice over IP (VoIP). <br><br>Just this month, semiconductor developer Cadence Design Systems announced they would be integrating the NetIron MLX as part of their new centralized data center network. With a price/performance level that rivals any router on the market, Foundry has raised the stakes in the competitive 10Gbe market. Rival Cisco has already started to position itself as a provider of a broad range of management solutions targeted towards the coveted triple-play sector. Sometimes companies replace dead equipment that is no longer functioning properly. In this instance, equipment can be salvaged or recycled, which amounts to getting small amounts of money for the value of the raw materials. The German sounding city name was changed to Ojai during the First World War in 1917.<br>The unsurpassed scenic beauty of this area makes it a veritable destination for movie sets and film festivals. The valley was the location for the famous 1937 Frank Capra film, ‘Lost Horizon’, which depicted the mythical utopia called ‘Shangri-La’. <br><br>This place is also the home of the Ojai Film Festival, which annually showcases independent films from around the world. The film festival holds every year in mid-summer.  The scenic beauty of the area is further accentuated by the superlative efforts put in the environmental development of both the city proper, and its surrounding countryside by the city authorities. <description><![CDATA[ When you think of condiments, what comes to mind?  Ketchup, mustard and other condiments that have been in American culture for a very long time.  Recently, with globalization and the immigration of foreigners to America, we have seen and tasted foods from all over the world.  Salsa is quickly becoming the most popular condiment in the United States.  According to sales records, salsa is taking over the top spot from ketchup.  Unlike ketchup, salsa is easily made at home and offers a variety of ingredients and variations.  You can increasingly see salsa being used on a variety of foods.  It’s successfully integrated its way into American foods.  The other day, I saw somebody adding it to their baked potato.  <br><br>Although tomatoes are the main ingredient of salsa, many times, you’ll see salsa without tomatoes.  Fruit salsa (mango salsa) is becoming a very popular alternative to the traditional tomato salsa.  Originally used strictly with Mexican food (salsa means sauce in Spanish), salsa is now being used with such things as eggs, potatoes, burgers and other foods.  Since salsa is so easy to make, you can have many types of fresh salsa in your refrigerator at all times.  If you like especially spicy food, you can add extra spice to your recipe.  Certain cultures that enjoy spicy food (Indian) also enjoy making and using homemade salsa.  Even cultures that aren’t used to spicy food (Japanese) enjoy using salsa (although, a milder version of salsa) with their dishes.<br>	<br>Now, let’s turn to the healthy aspect of salsa.  With so much flavor, it’s hard to believe that salsa is actually very healthy for you.  Salsa adds an extra serving of fruits or vegetables.  The only downside of eating store salsa is that they are typically high in sodium (not high in fat).  When you make salsa at home, there is nothing unhealthy about it.  A tablespoon of a condiment, whether ketchup or salsa, cannot supply a very large amount of nutrients, no matter what the ingredients. <br><br>But in larger portions, the various vegetables and fruits in salsa can supply a wide range of antioxidant vitamins, natural phytochemicals (such as lycopene in tomatoes), and the mineral potassium that is in such short supply in our diets.  Also, researchers have identified a compound in cilantro, a key flavor component of salsa and a variety of other dishes, that kills harmful Salmonella bacteria and shows promise as a safe, natural food additive that could help prevent foodborne illness, according to a joint study by U.S. and Mexican researchers.  <br><br>The compound -- dodecenal -- was isolated from the fresh leaves of cilantro, or coriander, one of the main ingredients found in salsa, along with tomatoes, onions and green chilies. The compound also is found in the seeds of cilantro. Both leaves and seeds contain about the same amount of dodecenal, but the leaves are used more abundantly in salsa. <br><br>Basically, who doesn’t love salsa?
