<description><![CDATA[ <p><em>By Jon Griffin </em> <br>  <br>&nbsp; <br>  <br>I wanted to make some hard boiled eggs today and figured I would do some research.&nbsp; <br></p> <br><p>Yes I know, you already know how to make hard boiled eggs. Well guess what, so do I. At least I thought I did. You see I have been making them different every time I cooked them. One time I started with hot water and let them boil for about 15 minutes. Another time, I would start with cold water and boil them for about 15 minutes. And sometimes I just stuck them in the water and prayed that when I took them out they were done. <br></p> <br><p>Well I did some experimenting and tried a method that I had heard about before: <br></p> <br><ol> <br>  <li>Start with cold (tap) water and cover the eggs at least an inch with the water <br>  </li> <br>  <li>Bring them to a rolling boil, not a simmer a good rolling boil. <br>  </li> <br>  <li>Then reduce the heat to medium and cook for 10 minutes. <br>  </li> <br>  <li>After 10 minutes, remove the eggs from the heat (use a slotted spoon please) and run them under ice cold water. <br>    <br>If you live in Las Vegas like I do and don't have ice cold water, well you can simply place them in a bowl of ice water. <br>  </li> <br>  <li>When the egg is completely cooled you can peel it the normal way. <br>    <br> <br>  </li> <br></ol> <br><p>How did this experiment turn out? <title>Cooking Asparagus The Fun And Easy Way</title>

<description><![CDATA[ <p>Preparation is the key when you're going to cook asparagus.&nbsp; There are several methods of cooking boiling, grilling, steaming, or roasting.&nbsp; The microwave is also a good option when cooking asparagus.&nbsp; Cut the asparagus into sections and you can use it in stirfries you can also blanch the asparagus and use it in vegetable dips.&nbsp; Of course, there's nothing like steamed asparagus with butter, salt, and pepper.<br>  <br><br>  <br>When buying asparagus make sure that it is fresh, the asparagus will taste much better and can be kept for two to three days when properly stored.&nbsp; Once you get the asparagus home and ready to prepare, you'll need to trim it.&nbsp; The easiest way to trim asparagus before cooking is to simply do it by hand by bending the stock until it breaks.&nbsp; If it will not break but only bends, it is probably old and will not be as fresh as you would like it.&nbsp; Some cooks prefer to peel the bottom of the stocks this is not really necessary but sometimes helps when the stocks are a little woody.&nbsp; Contrary to popular belief the thicker asparagus is actually more flavorful than the pencil thin variety that most people want to buy.<br>  <br><br>  <br>An easy way to peel asparagus if you decide to go that route, is to lay a stalk on the counter or a cutting board and use a vegetable peeler. Starting at the top of the asparagus peel all the way to the end.&nbsp; The main reason anybody would peel asparagus, as I mentioned above, would be to make the asparagus more tender.&nbsp; You don't need to completely peel the asparagus either, simply peel down one one side to allow moisture to enter the asparagus while it is cooking.<br>  <br><br>  <br>If you want to steam the asparagus here is a simple method. After you have timmed your asparagus to the size you need, and optionally peeled it, place them in a saucepan and about an inch of water.&nbsp; Another steaming method you can use when cooking asparagus is to stand them vertically.&nbsp; Make sure you tie the bundles at the bottom and the top so they don't fall over in the pan.&nbsp; They should steam for approximately 5 to 10 minutes depending on the thickness.<br></p><br><p>Boiling is a great way to cook asparagus also.&nbsp; You want to use just enough water to cover the asparagus but make sure all the stems face the same direction and are covered with water.&nbsp; The asparagus will take between four to six minutes to cook completely, but again that depends on the size.<br>  <br><br>  <br>One method I really enjoy is using the grill.&nbsp; Cooking asparagus on the grill either directly over the fire or on skewers gives a great smoky flavor.&nbsp; Depending how you like them, cook the asparagus for anywhere from 30 seconds to 10 minutes.&nbsp; Another great way to cook the asparagus is to wrap them in foil with a little bit of olive oil and salt and pepper and cook them on the grill for 10-20 minutes.&nbsp; You'll have a great treat.<br>  <br><br>  <br>On those winter days when you really don't want to cook asparagus on the BBQ, another great option is roasting.&nbsp; Simply heat the oven to 425° F, and lay the asparagus flat on a baking sheet lined with foil.&nbsp; You can put any seasoning you want on the asparagus when roasting; salt, pepper, lemon pepper or any other spice that you have on hand are good.&nbsp; You will be rewarded with a nice tender stalk with a roasted flavor in about two to three minutes.</p><br /><br />--<br /><P>Jon Griffin has been playing music since he was 7 years old. Finding a good recipe for cooking corned beef and cabbage that is easy to follow can be difficult, but this recipe is very easy even for a beginning Irish chef. Don’t forget a good Irish beer like Harp or Guinness or try a good micro-brewed stout, local is best. <br></p> <br><h2>The First Step In Cooking Corned Beef <br></h2> <br><p>Organization is the key whenever you start cooking and cooking corned beef is no exception. First, make sure that all of the utensils and ingredients you need are ready, you don’t want to start looking for that one spice you thought you had. As far as utensils, make sure you have measuring cups, spoons, knives and of course a pan big enough to cook the corned beef in.&nbsp; When cooking corned beef, selecting a cut of meat is important. <br></p> <br><h2>Meat Selection Is Very Important <br></h2> <br><p>What is corned beef anyway? Corning refers to the way the beef has been cured.&nbsp; Before there was any refrigeration salt was used to cure meat. The salt was placed on the meat in rows called “corns”. Today, beef brisket is cured in a salt-water brine to give it the traditional corned beef taste. <br></p> <br><p>Freshness is important so before you start cooking, make sure you check the dates on the package.&nbsp; It is important to purchase a package that is fresh.&nbsp; If there is a sale on, you can freeze a sealed package of corned beef for 2 to 3 months, just make sure that the package is airtight.&nbsp; Leftovers are fresh for 3 to 4 day after cooking corned beef. <br></p> <br><h2>How To Cook Corned Beef <br></h2> <br><p>Corned beef may require a long cooking time to make it as tender as possible. Several options are available when cooking corned beef. You can cook the corned beef in the oven, with a slow cooker or even on the stove.&nbsp; Remember, like many peasant cuts of meat corned beef needs to a long cooking time. Because of the way corned beef is processed it may be slightly pink, even after cooking completely.&nbsp; You do not need to add any spices, but you can if you want to. Here are some suggestions, powdered mustard (English), thyme and parsley stalks. <br>  <br> <br></p> <br><p>It is important to place the meat fat side up if you are cooking corned beef in the oven. When a thermometer in the center of the cut reads 350 degrees it is done. To make the corned beef really tender, cover the corned beef with water in the pot. Remember, you need a big pot. Expect to cook the meat about an hour for each pound of meat.&nbsp; <br></p> <br><p>Crock-pot cooking is an easy and convenient method of cooking corned beef. Cooking with a crock-pot allows you to cook the vegetables along with the meat. First, place the vegetables on the bottom of the crock-pot. Next, make sure you cut the corned beef in pieces. This allows the corned beef to cook completely. Next add about one cup of water, the cabbage will also add lots of water to the pot.&nbsp; Cook on low for 10-12 hours or high for 6-8 hours. <br></p> <br><p>Cooking corned beef on the stove is similar to cooking it in the oven. First, place the meat fat side up in a large pan and add vegetables if you would like. Next, cover the meat with water and bring the to a boil.&nbsp; Reduce heat and simmer for about one hour per pound of meat. <br></p> <br><p>Like most peasant dishes cooking corned beef is simple cooking. Remember, the original immigrants were living in tiny tenements in New York and did not have elaborate kitchens. <description><![CDATA[ Eating healthy should always be a priority. Healthy eating can be accomplished by simply changing eating habits and changing the methods you use to cook. There is no need to cook bland or boring dishes, many options are available. Understanding the flavors your dishes use means eating well and feeling well.<br><br><h2>Leaner Cuts of Meat</h2><br><br>Choosing leaner cuts of meat, such as low fat chicken and fish, will help you on your path to healthy cooking. When selecting red meats for instance, chose meats that do not contain high amounts of fat like sirloin and round cuts. Make sure you also check and buy only meat that has low marbling. Any visible fat should also be trimmed off prior to cooking. When buying ground beef make sure that it is as much as ninety-five percent lean when establishing healthy cooking habits.<br><br>Solving the problem of lean meat drying out is easy, simply include in your healthy cooking of these lean meats marinades that do more than flavor foods. Acidic liquids can easily decompose the connective tissue of the meat, so be sure to add some acidic ingredients, like vinegar, in your quest for healthy cooking. Many low fat marinades are available to choose from, but do not overlook the opportunity to prepare the marinade yourself. Twenty minutes of marinating should be sufficient for average sized meat cuts, but in general longer marinade times add flavor and tenderness. <br><br>The age-old Indian cooking technique of using a yogurt marinade is wonderful for chicken and lamb. Leave this marinade on for eight hours or even overnight for a wonderful flavor. The acid in the yogurt will tenderize the meat.<br><br><h2>Vegetables</h2><br><br>Healthy cooking does not mean eating only bland vegetables. One excellent healthy cooking technique is sautéing your vegetables. Use tiny quantities of chicken or vegetable broth as a substitute for oil, along with a few herbs and chopped chives. This healthy cooking technique gives vegetables a new, zesty flavor. Another alternative is using roasted vegetables. The best choices for roasting are root vegetables such as sweet potatoes and carrots. <br><br><h2>Do Not Forget Dessert</h2><br><br>Healthy cooking does not mean having to do without your dessert. Fruits are always a welcome addition to healthy cooking. Wonderful as a side dish, mixed berries with a topping of fat free vanilla yogurt will make your taste buds happy, while keeping you healthy as well. <description><![CDATA[ Beware of Your Home Loan<br><br>There is much talk lately about "predatory" home mortgages. These practices are easy to spot the borrower is aware of what to look for. Things like high interest rates, asset based lending, negative amortization, and balloon payments are just some of the tip-offs.<br><br>Some of these actions are only predatory when the borrower is unaware of the consequences. Many of these loans were originally designed for more sophisticated borrowers who knew of the consequences.<br><br>Predatory mortgages are in the news all the time now because many mortgage companies decided to increase business and use these sophisticated techniques on borrowers who were not qualified to purchase a house. As long as home prices are rising and interest rates are low, most homeowners do not notice the problem; they can always refinance. With the downturn in many real estate markets and rising interest rates, homeowners are now facing the realities of these mortgages.<br>Negative Amortization<br><br>Negative amortization is a type of loan where the loan balance increases every month instead of decreasing. This is not always bad as some sophisticated investors can use this to their advantage in a rising real estate market.<br>High Interest Rates<br><br>Some mortgage lenders will target certain ethnic groups or certain neighborhoods. Usually they prey on first-time buyers who do not have good credit and do not have enough income to pay the mortgage. This leads to the mortgage holder losing the property or maybe refinancing again, this is called loan flipping.<br>Asset Based Lending<br><br>This occurs when a mortgage company lends money based on the total assets of the borrower. The mortgage company does not take into account the borrowers income or ability to pay the loan back. This is always bad and should not be confused with no-doc loans in which the borrower is stating their income.<br>Balloon Payments<br><br>Sometimes mortgage lenders will talk about loans being 30 due in 5 or 40 due in 10. These are called balloon loans and the first number is the term that the loan is based on for payment. The second number describes the “balloon payment”, or due date of the loan. In the first example, the loan is “due in full” five years from the date the loan was made.<br><br>Again, these types of loans, like interest only loans, are not always bad. Used properly a smart investor in a rising market can conserve capital and buy more properties.<br>Interest Only Loans<br><br>Home loans that only require the interest portion of the loan paid are also a potential problem. The principal is never paid down so in a level or declining market there is a potential to be “upside down” or owe more on the house than the house is worth. This is a serious problem when the original mortgage was with no money down.<br><br>These are just some of the mortgage lending pitfalls to watch for. <description><![CDATA[ The term <b>Afrocuban-Music</b> includes music of ritual, festive-religious as well as secular events. These are directly tied to the musical cultures of Africa. These African musical traditions were all included in one form or another when Cuban music was in its development. Four major influences are the musical culture of the <i>Yoruba</i> (including the Iyesá), the <i>Arará</i>, the <i>Congo</i>, and the <i>Carabalí</i> (generically used to identify the Ibibio slaves). <br><br>The <i>Cabildos de Nación Lucumí</i> or Yoruba were where the music and dance of the <i>Yorubas</i> and their descendants were performed. These were exclusive societies known simply as <i>Cabildos</i>, and they were very abundant in the main urban centers of central-western Cuba. They were also in the <i>Casas de Santo, </i>or houses of the saints, or <i>Ilé-ocha</i> even today. <br><br>Cuban Santería is the most popular cult among the Cuban population and blends both traditional Yoruban religion (Lukumi) and Catholicism. Composed of two liturgical systems: the <i>Regla Ocha</i> (Rule of the Orisha) and the <i>Oráculo de Ifá</i>. This Ocha-Ifá religious complex contains both the religious and festive practices. These take place in the Casas de Santo and Cabilidos. <br> <br>In the case of religious festivities, the instrumental ensemble formats are dictated by tradition and what is "correct" for this particular type of celebration.
