As each of the three rings appear, they indicate the interenal temperature. Adjust the heat downward to maintaine the internal temperature desired. When the food is finished cooking, the pressure must be lowered before the cooker can be opened. This can be done in three different ways. The best method is to place the entire cooker (with lid on) in the sink under cold running water. With this method there is no evaporation of steam and all of the flavor is retained. When the pressure is reduced completely, the blue point subsides and lid may be opened.The second method is to slide the blue button on the handle to release the steam from the cooker. While this does bring the pressure down quickly, it also allows for loss of water vapor and some of the flavors and aroma may be lost. The third method is to simply turn off the stove and let the cooker cool down on its own. While this method does retain all the flavor and aroma of the dish, it also continues to cook the food until the lid is opened.
